Cook the Beef
Preheat your grill or pan. Sear the ground beef on a hot plancha, griddle or skillet until browned.
Add the Vegetables
Stir in the chopped onion, garlic, corn, and kidney beans. Cook for a few minutes until softened.
Make the Nacho Meat Sauce
Add the tomato purée and tomato passata, then mix well. Season with smoked paprika, cumin, chili powder, salt, and pepper.
Build the Nachos
Spread the nachos on a baking tray and sprinkle with ¾ of the grated cheese.
Add Toppings
Spoon the beef mixture over the nachos, then top with the remaining cheese and diced jalapeños.
Melt the Cheese
Place the tray on the grill or in the oven and bake indirectly for 5–10 minutes until the cheese is fully melted and bubbly.
Serve
Top with sour cream and serve immediately.
