Fajitas are a staple of Mexican cuisine, perfect for lively barbecue nights with friends and family. This grilled fajitas recipe features tender beef, but you can easily swap it for chicken if you prefer. For the best results, choose soft cuts like sirloin, tenderloin, or entrecôte from a trusted source. These tender cuts cook quickly on the grill, giving you juicy, flavourful fajitas every time.

Serving fajitas is also part of the fun: present the ingredients separately – sizzling meat and vegetables in a cast iron pan, warm tortillas, creamy sauces, and fresh garnishes – and let everyone assemble their own.

Ingredients

400 g beef (sirloin, tenderloin, or entrecôte)
1.5 bell peppers (use a mix of red, yellow, and green)
1/2 onion
Tortillas
Sour cream
Lime wedges
Fresh coriander
Chopped chilli pepper (optional for heat)
Marinade Ingredients:

1/2 cup orange juice
1/4 cup olive oil
Juice of 1 lime
1 tsp ground chilli
1/2 tsp sweet paprika
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp ground cumin
1/2 tsp salt
Guacamole Ingredients:
1 ripe avocado
2 garlic cloves
Pinch of cumin
Salt, to taste
Juice of 1 lime

Salsa Ingredients:
2 tomatoes
1/2 chili pepper
1/2 red onion
Juice of 1/2 lime
Handful of fresh coriander
Salt, to taste

Instructions

Prepare the Fajita Marinade
In a bowl, mix orange juice, lime juice, olive oil, and spices.
Cut beef into thin strips, slicing across the grain.
Add the beef to the marinade, ensuring each piece is coated.
Slice the peppers and onion into thin strips, then mix them with the marinated beef.

Make Fresh Guacamole
Use a mortar to grind garlic with salt and cumin.
Slowly add chopped avocado and mash until creamy.
Stir in lime juice and adjust seasoning as needed.
Alternatively, blend all ingredients for a smooth guacamole sauce.

Prepare Mexican Tomato Salsa
Peel and deseed the tomatoes, then cut into cubes.
Finely chop the onion and chili pepper, and mix with the tomatoes.
Add lime juice and season with salt.
Stir in chopped coriander before serving.

Grill Fajitas Using a Cast Iron Griddle
Preheat your grill to 200°C and place a cast iron griddle on it.
Drain the beef and vegetables from the marinade.
Grease the pan with a little olive oil and add the beef.
After 2 minutes, turn the meat and add the vegetables.
Grill for 6–8 minutes, stirring occasionally, until the meat is browned and the vegetables slightly crispy.

Warm tortillas on the grill.
Serve sauces in small bowls alongside the sizzling beef and vegetables.
Add sour cream, fresh coriander, lime wedges, and chopped chili pepper for extra flavour.
