Cook the Rice
Prepare rice in salted water according to package instructions. Drain, fluff, and keep warm.
Prep the Ingredients
Dice the red onions and finely chop the garlic.
Preheat the Grill
Heat your grill with a plancha plate over medium-high heat until hot.
Make the Sweet & Spicy Sauce
In a bowl, combine soy sauce, agave syrup (or honey), lime juice, Sriracha, sweet chilli sauce, garlic, and ground coriander. Mix well.
Cook the Minced Pork
Add vegetable oil to the plancha and cook the minced pork, breaking it up, until browned and slightly crispy.
Add Onions & Sauce
Stir in the diced onions and season with salt and pepper. Pour over the sauce and cook for 3–5 minutes until the pork is fully coated and caramelised.
Fry the Eggs
In a separate pan or on the grill, fry the eggs to your preferred doneness.
Assemble the Dish
Spoon rice into bowls, top with the sweet and spicy pork, add a fried egg, and garnish with fresh basil.
