Set up the grill: Remove one grate and the Flav-R-Wave™ heat plate, then place a cast iron wok in the empty space. Set the side burners to medium and the burner under the wok to low. Preheat the grill to 180°C.
Cook the bacon: Fry the bacon strips in the heated wok until golden brown. Remove and set aside.
Sauté the vegetables and spices: In the remaining bacon fat, cook the onions until translucent. Add garlic, chili spices, cumin, and smoked paprika, cooking for 1 minute until fragrant.
Add beans and sauce: Stir in tomato passata and rinsed beans. Pour in beer, then add sugar and molasses.
Simmer on the grill: Close the grill lid and cook for 10 minutes, stirring occasionally. Add the cooked bacon and cook another 5–10 minutes, or until the beans thicken. Season with salt and pepper to taste.
Serve: These beans are delicious on their own or served alongside 3-2-1 smoked ribs. For a perfect BBQ pairing, prepare the beans during the final stage of rib cooking while caramelizing the sauce.
