Preheat your grill to 240°C.
Core the apple and slice it thinly.
Line a baking tray with baking paper.
Spoon 4 tablespoons of honey onto the paper, dividing it into four separate portions.
Arrange the apple slices over each portion of honey.
Drizzle the remaining tablespoon of honey evenly over the apple slices.
Cut the puff pastry into 4 equal pieces. Place each piece over the apples, gently pressing down around the edges to seal.
Transfer to the grill and bake indirectly for about 15 minutes, or until the pastry is golden and puffed.
Remove from the grill and allow to cool slightly.
Top with fresh blueberries and finish with a light dusting of icing sugar.
Serve warm and enjoy!
