This Grilled Watermelon Margarita is the ultimate summer cocktail, combining sweet watermelon, fresh lime juice, and tequila with a delicious smoky flavour from the grill. Grilling the watermelon caramelizes its natural sugars and adds depth to this refreshing margarita recipe.

Perfect for backyard BBQs, summer parties, or relaxing evenings on the patio, this easy cocktail pairs beautifully with seafood, tacos, and grilled dishes like Mahi Mahi with Mango Salsa or Al Pastor Tacos.

Ingredients

2 watermelon wedges, sliced ½-inch thick with rind attached
2 lime wedges
1 tbsp kosher salt
1 tbsp white sugar
1 oz fresh lime juice
2 oz tequila (or mezcal for extra smoky flavour)
1 oz Triple Sec
Substitute with Cointreau or Grand Marnier for a sharper citrus taste
Ice, for serving

Instructions

Step 1: Grill the Watermelon
Preheat your grill to high heat (400–500°F / 200–260°C).
Lightly oil the grill grates to prevent sticking.
Place watermelon wedges directly on the grill and cook for about 2 minutes per side, until grill marks appear.
Remove from the grill and allow the watermelon to cool slightly.
Cut away the rind and blend the grilled watermelon into a smooth juice.
Step 2: Prepare the Margarita Glasses
Mix the kosher salt and sugar together in a shallow dish.
Run a lime wedge around the rim of each margarita glass.
Dip the rims into the salt-sugar mixture until evenly coated.
Fill the glasses with ice.
Step 3: Mix the Cocktail
Add the grilled watermelon juice, lime juice, tequila, and Triple Sec to a cocktail shaker filled with ice.
Shake vigorously until chilled.
Pour into prepared margarita glasses over fresh ice.
Garnish with lime wedges and serve immediately.
