Prepare the Courgette
Wash the courgette and cut it lengthwise in half. Using a spoon, carefully scoop out the soft centre to create courgette boats, leaving a thin border so they keep their shape while grilling.
Prepare the Filling
In a bowl, mix together:
Pre-cooked rice
Sour cream
Diced feta cheese
Ajvar
Quartered cherry tomatoes
Italian herbs
Stir until the mixture is well combined and creamy. Season with salt and black pepper to taste.
Stuff the Courgette
Spoon the filling evenly into the hollowed courgette halves. Sprinkle the grated cheese over the top for a delicious golden crust.
Preheat the BBQ
Preheat your **Broil King gas barbecue to 170–180°C using indirect heat (turn on the outer burners and leave the middle burner off).
Grill the Stuffed Courgette
Place the stuffed courgettes on the grill over indirect heat, close the lid, and cook for 20–25 minutes, until:
the courgette is tender
the filling is hot
the cheese is melted and nicely gratinated
Serve
Remove from the grill and serve warm. These grilled stuffed courgettes make a delicious vegetarian BBQ main dish or side.
