Easy grilled vegetable skewers packed with fresh, colourful veggies and served with a creamy garlic chive dip. This healthy BBQ side dish is perfect for summer grilling, vegetarian meals, or light dinners.

Ingredients

For the Vegetable Skewers
1 corn on the cob, cut into chunks
1 courgette, sliced into thick rounds
1 large red onion, cut into chunks
1 red bell pepper, chopped
1 yellow bell pepper, chopped
Olive oil, for coating
Salt & black pepper, to taste


For the Garlic Chive Dip
4 tbsp curd cheese (or soft cheese/quark)
1 tbsp mayonnaise
1 pinch garlic (fresh or powder)
Salt & black pepper, to taste
Fresh chives, finely chopped

Instructions

Prepare the Vegetables
Wash all vegetables thoroughly. Cut into large, even-sized pieces to ensure even grilling.

Season the Veg
Place the chopped vegetables in a large bowl.
Drizzle with olive oil and season with salt and pepper. Toss well to coat evenly.

Assemble the Skewers
Thread the vegetables onto skewers, alternating colours and types for even cooking and presentation.

Grill the Skewers
Preheat your grill to medium heat.
Grill the skewers for 10–13 minutes, turning occasionally, until tender and lightly charred.

Make the Garlic Chive Dip
In a small bowl, mix together curd cheese, mayonnaise, garlic, salt, and pepper.
Stir in freshly chopped chives and adjust seasoning to taste.

Serve
Serve the hot grilled vegetable skewers with the creamy garlic chive dip on the side.
