Prepare the tuna
Drizzle the tuna steaks with olive oil, then season generously with salt and black pepper. Gently massage the seasoning into both sides of the fish.
Preheat the grill
Set your Broil King grill to 200°C. Position the cooking grids point-side down and allow the grill to fully preheat.
Adjust the heat
Once hot, reduce the burners to medium heat and lightly oil the grill grates to prevent sticking.
Grill the tuna
Place the tuna steaks on the grill and cook for approximately 2 minutes per side. This timing is ideal for 2cm-thick steaks and will give you a lightly seared outside with a perfectly rare centre.
Create grill marks (optional)
For a professional finish, place the steaks at an angle on the grill. Rotate them 90 degrees after 1 minute on each side to achieve classic diamond grill marks. Lightly brush with olive oil before flipping.
Tips
Avoid overcooking - tuna is best served rare to medium-rare.
Use high-quality, fresh tuna for the best flavour and texture.
Let the grill fully preheat to ensure a proper sear.
