If you love grilled salmon and have already tried our recipe for Salmon on a Plank, now it’s time to try something new. Salmon in paper parcels is another great recipe for juicy, tender fish. By enclosing the fish together with garlic butter and lemon in paper, the salmon becomes wonderfully aromatic.
To prepare perfectly grilled salmon, we used a grill with iQue technology, which allows you to maintain the temperature inside the grill and, with the dedicated app, provides constant control over the internal temperature of the meat.
Remember that grilling times are approximate and may vary depending on the air temperature. For this reason, we recommend monitoring the internal temperature of your grilled food. In this recipe, we used a temperature probe. If you are using an instant-read thermometer, make sure to check the temperature in the thickest part of the fish.
Ingredients
500 g salmon fillet with skin / 2 pieces
2 lemons
2 tbsp butter
2 cloves garlic
Salt and pepper to taste
100 g young sugar snap peas
300 g broccoli
Dill and bread, to serve
Instructions
Bring a pot of water to the boil and add the broccoli, divided into florets. Cook for 5 minutes, then drain and place in a bowl of cold water. Drain again and set aside.
Melt the butter in a small saucepan, then add two tablespoons of lemon juice and the grated or pressed garlic.
Turn on all the burners and preheat the grill to 175°C.
Prepare two pieces of Broil King butcher paper, approximately 50 cm long. Place 6 slices of lemon in the centre of each piece of paper, then place the salmon on top, skin side down.
Insert the temperature probe into the salmon, making sure the tip is positioned in the thickest part of the fish.
Add the blanched broccoli and sugar snap peas to the salmon. Pour over the garlic butter and season with salt and freshly ground black pepper.
Fold the edges of the paper over so that a sealed parcel is formed.
For grilling, turn off the two middle burners and place the prepared salmon parcels on the cooking grids above them. Close the grill lid and grill for approximately 15 minutes, monitoring the internal temperature of the fish using the Broil King iQue app.
The dish is ready to serve when the internal temperature reaches 58°C.
Serve immediately with chopped dill, bread and other accompaniments.
