Grilled Peaches with Mascarpone Cheese

Grilled Peaches with Mascarpone Cheese

Difficulty: 1/5
Prep Time: 2-3 mins
Cook Time: 8 - 13 mins
Serves: 4

Grilled peach tastes quite special; the grill really brings out the peach’s sweetness and makes it melt in the mouth. It’s a great idea for a simple and fast dessert that you can prepare in less than 15 minutes. You can serve your grilled peaches as a separate dish or add them to a salad. They go perfectly with the savory flavours of Gorgonzola cheese, prosciutto and nuts.

Ingredients

Ingredients
4 peaches

Serve with:
200 g mascarpone cheese
1 tsp vanilla paste
lemon juice
salt flakes
honey / maple sauce
almond flakes
mint or thyme leaves

Instructions

When choosing peaches for the grill, go for peaches that are ripe but still slightly hard, so you can be sure that they will not fall apart during cooking.

  • Cut the peaches in half, remove the stones and brush with olive oil.
  • Mix the mascarpone cheese and vanilla paste with a fork and set aside in the refrigerator.
  • Preheat the grill and turn the knobs to medium on one side and low on the other side. Grill the peaches skin-up for 4-5 minutes on the warmer side of the grill. Your peaches should soften slightly and mouth-watering traces of caramelization will appear on their surface.
  • When the 4-5 minutes are up, turn them over and transfer to the cooler part of the grate and grill for another 6-8 minutes.
  • Serve warm with a scoop of mascarpone cheese or ice cream, drizzle with honey and/or lemon juice.
  • To enhance the flavour even more, carefully add a little salt and some small leaves of fresh thyme
