Spring is the perfect season to enjoy tender, flavourful lamb. This grilled lamb chops recipe combines the aromatic flavours of rosemary and garlic, creating a dish that’s simple, quick, and irresistible. With just a few minutes on the grill, you can serve juicy, perfectly cooked lamb chops that impress every time.
Ingredients
400 g lamb chops
1/3 cup olive oil
1 small clove garlic, crushed
1 sprig fresh rosemary, finely chopped
Salt and black pepper, to taste
1/2 lemon
Optional sides:
Green peas
New potatoes
Instructions
Prepare the Marinade
Finely chop the rosemary leaves and combine with crushed garlic.
Mix the rosemary and garlic with olive oil and a pinch of salt.
Prepare the Lamb Chops
Wash the lamb chops and pat dry with a paper towel.
Cut the meat into individual chops with one bone per chop.
Lightly press down on each chop with your hand, then rub with the rosemary-garlic oil.
Sprinkle with salt and pepper. (Tip: If marinating for longer, skip the salt until just before grilling.)
Preheat the Grill
Turn the grill to high and heat until 250°C.
Reduce to medium heat and grease the grill with a little oil.
Grill the Lamb Chops
Place the lamb chops on the grill for about 1 minute per side.
Optional: Drizzle with lemon juice while grilling. For a milder lemon flavor, place the lemon halves on the warm grill for a few minutes before juicing.
Prepare the Sides
If serving with green peas and new potatoes, prepare them before grilling the lamb.
Pre-cooked potatoes can be reheated on the grill alongside the lamb for a complete meal served all at once.
