This grilled chicken breast recipe is juicy, flavourful, and easy to prepare. Stuffed with creamy mozzarella, sun-dried tomatoes, and fresh basil, these Italian-style chicken fillets are perfect for a light yet satisfying lunch or dinner.
If you usually avoid grilling chicken breast because it can turn out dry, this recipe will change your mind. Brushing the meat with sun-dried tomato oil keeps it tender and full of flavour while grilling.
Serve this stuffed chicken breast with a fresh salad, grilled vegetables, or roasted potatoes for a complete meal.
Ingredients
2 chicken breast fillets
6 sun-dried tomatoes in oil
½ mozzarella ball
A few fresh basil leaves
Salt, to taste
Black pepper, to taste

Instructions
Slice each fillet along the side to create a pocket for the filling.
Brush the inside and outside of the chicken with the oil from the sun-dried tomatoes.
Season both sides with salt and black pepper.
Cover and refrigerate for at least 1 hour to allow the flavors to develop.
Slice the mozzarella into pieces and place 2 slices inside each chicken breast pocket.
Add fresh basil leaves and sun-dried tomatoes on top of the mozzarella.
Secure the chicken breasts with toothpicks if needed to keep the filling inside.
Preheat the grill and lightly oil the grate.
Set the grill to medium heat and cook the chicken breasts for 12 to 15 minutes, turning several times during cooking.
Brush the chicken with additional sun-dried tomato oil each time you turn it to keep the meat juicy.
Remove from the grill once the chicken is fully cooked and the cheese has melted.
Serve immediately with a fresh salad or your favorite side dish.
