Yes, you really can bake fresh bread on your gas grill. This simple wheat bread recipe uses the Broil King Cast Iron Rib Roaster to create a beautifully golden loaf with a crisp crust and soft, satisfying centre. A great way to discover yet another use for your grill and make the most of your Broil King accessories.

Ingredients

1 kg wheat flour
650 ml hot water
25 g fresh yeast ( 7 g instant)
½ teaspoon sugar
2 teaspoons salt
2 tablespoons olive oil

Instructions

  • If you use fresh yeast, start by preparing the leaven. Into a tall-sided dish, put the crumbled yeast, add sugar, pour ½ cup of warm water and add 2 tablespoons of flour. Mix thoroughly, cover and set aside in a warm place for 5-10 minutes. If you are using instant yeast, omit this step and pour it into the water, along with the flour.
  • Pour the remaining water into your kitchen stand mixer bowl, add the leaven and flour mixed with salt. Add one tablespoon of oil and turn on the kneading function at the lowest speed. After the initial mixing of the ingredients, add a second tablespoon of oil and increase the speed.
  • Knead the dough for 5-10 minutes until it is elastic, uniform and slightly sticky.
  • If you make the dough by hand, follow the same process. First, mix the ingredients in a bowl using a spoon, then transfer the dough to a flat surface and knead by hand for about 10-15 minutes.
  • Cover the finished dough and leave in the refrigerator over night. The dish should be quite large because the dough will increase in volume significantly.
  • The next morning, pull the dough out of the fridge and lay it out on a flat surface sprinkled with flour. Stretch out the sides and wrap them over on top, thus forming an elongated loaf. Turn it over so that the connection is underneath.
  • Set aside on a heavily floured table top, cover with a cloth and leave in a well-ventilated place for 40 minutes.
  • When the dough is almost ready, you can prepare the grill for cooking. We warm up the baking dish (our cast iron Rib Roaster) along with the grill. So, before firing up the grill, put the Rib Roaster with cover on the grill over the middle burners. Preheat the grill by setting the outer knobs to high and the middle ones to medium. When the temperature reaches about 180°C, set the middle burners to low and the external burners to medium-low and wait a while until the temperature stabilizes at about 200°C.
  • The grill will take a little longer to warm up but, thanks to this method, it will be easier for you to maintain a safe temperature for the bread and the baking dish will heat up evenly. Bake your bread at 200-220°C.
  • With the help of leather gloves, take the lid from the Rib Roaster and put the raised dough inside. Cover the Rib Roaster and close the grill.
  • After 35 minutes, uncover the Rib Roaster and bake for another 35 minutes. When time is up, the bread will have a nice golden color and a beautiful, crispy crust. To make sure the bread is baked, you can check the dough with a wooden skewer or stick; if, after pulling out the skewer, it is dry, the bread is ready. Pull the bread out of the Rib Roaster, and let it cool on the grill.
