Prepare the Batter
In a large bowl, sift the flour and add salt, baking powder, and sugar. Mix well. Add milk and melted butter, stirring gently.
Beat in the egg last to avoid curdling from the warm butter.
Mix with a fork just until smooth and lump-free. Avoid overmixing for fluffy pancakes.
Preheat the Grill
Place a cast iron griddle on the grill in place of two grates.
Turn the burners directly under the plate to medium heat. Preheat for 5 minutes, then reduce to medium-low.
Grease the hot griddle plate lightly with vegetable oil or spray.
Cook the Pancakes
Pour batter onto the hot cast iron griddle using a ¼ cup measure (or ice cream scoop). You can cook 6–8 pancakes at a time depending on plate size.
Cook until bubbles form and start to pop on the surface (about 1–2 minutes).
Flip using a long spatula and cook for another minute until golden brown.
Remove and keep warm.

Sweet: Honey, jam, or maple syrup
Savoury: Crispy bacon, fried eggs, or sautéed vegetables
