Impress your guests with juicy BBQ rotisserie chicken, packed with flavour and infused with fresh herbs and citrus.

Ingredients

1 Chicken


Marinade/Fill:⁠
⁠Fresh thyme, rosemary & parsley – ¼ cup each⁠
Olive oil – ¼ cup⁠
Minced garlic – 2 tbsp⁠
Crushed red pepper – 1 tsp⁠
Kosher salt & black pepper – 1 tbsp each⁠
Lemons – 2, quartered⁠
Onions – 2, quartered⁠

Instructions

Rinse chicken, pat dry, and gently massage.⁠
Mix marinade ingredients in a bowl. Stuff between skin and meat, and place extra inside cavities.⁠
Truss chickens and cover in the fridge. Marinate 4–12 hours.⁠
Preheat smoker or grill to 350°F / 177°C. Attach rotisserie motor.⁠
Mount chickens on rotisserie rod (breast/back up) and secure with forks.⁠
Cook for 2 hours (20 min per pound) until internal temp reaches 170°F / 77°C.⁠

Serve hot and enjoy perfectly cooked, herb-infused rotisserie chicken straight from your grill!⁠
