250 g dark chocolate
150 g butter
70 g cane sugar
150 g wheat flour
3 eggs
1 tablespoon cocoa powder
½ teaspoon salt
Instructions
Melt the Chocolate and Butter
On your side burner, fill a pot 1/3 with water and bring to a gentle simmer. Reduce the gas and place a metal bowl on top. Add 200 g of broken chocolate and butter, whisking until smooth. Set aside to cool.
Prepare the Batter
In a separate bowl, whisk the eggs with sugar until well combined. Gradually add the cooled chocolate and butter mixture, then fold in the flour, salt, and cocoa powder.
Assemble the Brownies
Line the baking tray with parchment paper and pour in the batter, smoothing the top. Chop the remaining chocolate into cubes and scatter over the surface for extra chocolatey goodness.
Grill the Brownies
Preheat your grill to high. Once it reaches 120°C, turn off the middle burners and reduce the outer burners to low. Place the tray over the middle burners and bake for 35–40 minutes. The ideal grilling temperature is 150–170°C.
