Before grilling, soak the maple board in water for 30 minutes. Wipe it dry, then brush the cooking side with oil. Preheat your gas grill to 150°C and lightly grease the grate. Score a diamond pattern on one side of the Camembert by placing it on the grill for 15 seconds, turning it 90°, then grilling for another 15 seconds.
Place the cheese grilled-side up on the maple board and set it on the grate. Grill for around 20 minutes, using this time to prepare your accompaniments. Serve the Camembert straight from the board as soon as it comes off the grill.
Grilling at a low temperature keeps the outside beautifully intact while the inside melts to perfection.
