The homemade Caesar dressing is made with egg yolks, anchovy fillets, Dijon mustard, lemon juice, garlic, and Parmesan cheese for an authentic and creamy flavor. If you prefer, you can also use mayonnaise and Worcestershire sauce as a simpler alternative.

1 Romaine lettuce or 2 mini Romaine lettuces
1 small baguette
2 tablespoons grated Parmesan cheese

2 tablespoons lemon juice
5 anchovy fillets
1 garlic clove
1/2 cup rapeseed oil
2 tablespoons grated Parmesan cheese

White wine or warm water if needed

Brush the chicken breast with olive oil and season with salt and black pepper.
Set the chicken aside while preparing the dressing and croutons.
Cut the baguette into small pieces and drizzle with olive oil.
Sprinkle the bread with dried basil, oregano, and thyme.
How to Make Homemade Caesar Dressing
Wash the eggs thoroughly and pour boiling water over them.
Separate the egg yolks and place them in a bowl.
Add the Dijon mustard and lemon juice, then whisk until combined.
Slowly pour in the rapeseed oil while whisking constantly until the dressing becomes smooth and creamy.
Finely chop the anchovy fillets and garlic, then stir them into the dressing.
Add the grated Parmesan cheese and mix well.
If the dressing is too thick, thin it with a little white wine or warm water.
Season with salt and black pepper to taste.
How to Grill Chicken for Caesar Salad
Preheat the grill to 200°C and lightly oil the grate.
Reduce the burners to medium-low heat.
