Buffalo wings are a classic finger food that’s perfect for grilling. You can control the heat level with our spicy homemade sauce recipe, making these wings as mild or fiery as you like. Just remember -buffalo wings are meant to be hot! For younger eaters, serve grilled corn on the side to keep things kid-friendly.

Ingredients

Chicken Wings:
1–2 kg chicken wings, washed and dried

Homemade Spicy Buffalo Sauce (for 2 kg wings):
100 g butter
2 garlic cloves, chopped or crushed
2 tablespoons brown sugar
1 tablespoon maple syrup
1 cup tomato passata
1 teaspoon sweet paprika
1 tablespoon hot paprika or cayenne pepper (adjust to taste)
Salt and pepper, to taste

Instructions

Prepare the Chicken Wings
Divide your wings into three parts. Use the two larger pieces for grilling. Set aside or discard the thinnest part (perfect for chicken broth).
Sprinkle the wings with salt and pepper.

Grill the Wings
Preheat your grill to 180°C (350°F).
Turn the grill to medium-low and grease the grate.
Place the wings on the grill and cook for 30 minutes, turning once.

Make the Buffalo Sauce
Melt the butter in a pan over medium heat. Add garlic and sauté until fragrant.
Stir in maple syrup, tomato passata, and sweet paprika.
Let the sauce simmer until it thickens.
Add sugar to balance acidity and cayenne or hot paprika to taste.

Combine Wings and Sauce
Transfer the grilled wings to a bowl and pour in two-thirds of the sauce. Toss to coat.
Place the wings back on the grill for 10–15 minutes, turning occasionally to prevent burning and let the sauce caramelize.
Remove the wings and toss them with the remaining sauce before serving.

Serving Suggestions
Serve with lemon slices, grilled corn, or celery sticks with yogurt-tahini dip to balance the heat.
