These Beer Brats Bites are juicy bratwurst simmered in beer with onions and bell peppers, then grilled until golden brown and tossed in a rich beer sauce. This easy German-style beer brat recipe is perfect for game day, BBQ parties, Oktoberfest, or quick appetizers.

Ingredients

1 large onion, chopped
1 green bell pepper, chopped
400 ml beer (lager or pilsner works best)
1 teaspoon marjoram
½ teaspoon black pepper
½ teaspoon salt
5 bratwurst sausages
1 tablespoon cornstarch mixed with water (for thickening)

Instructions

1. Prepare the Beer Base

Add the chopped onion and green bell pepper to a casserole dish or deep pan. Pour in the beer, then season with marjoram, salt, and black pepper. Stir everything together.

2. Simmer the Vegetables

Cook on medium heat for about 10 minutes, allowing the onions and peppers to soften and absorb the beer flavor.

3. Cook the Bratwurst

Place the bratwurst sausages into the beer broth. Let them simmer for about 15 minutes, turning once halfway through.

4. Grill the Brats

Remove the sausages and grill them on a plancha, skillet, or grill pan until golden brown on both sides.

5. Cut into Bites

Slice the grilled bratwurst into bite-sized pieces.

6. Make the Beer Sauce

Let the beer broth with onions and peppers cook down for a few minutes. If needed, stir in the cornstarch mixture to thicken the sauce.

7. Combine and Serve

Add the brat bites back into the sauce, mix well, and serve hot.
